Refried Black Beans from 1 lb Dried Beans
This is a vegan refried beans recipe, using black beans instead of the more common pinto beans.
When we replace lard with another oil, the beans will taste too bland. This is remedied with the
addition of lime juice. The red onion adds additional flavor, but can be replaced with a white
onion if preferred.
Making it this way is little bit different than that which most are familiar. Using this
simple recipe you'll find they still will be pleasantly surprised by just how good a
veganized, black bean version can taste.
Ingredients
- 1 Large Red Onion
- 1 Tablespoon Minced Garlic
- 1 Tablespoon Extra Virgin Olive Oil
- Black Beans, cooked from 1 lb dried black beans
- (Optional) Leftover Water from Cooking the Dry Beans
Steps
- Set stove to medium-low.
- Finely chop one red onion.
- Sauté the onion in a large skillet until the onion caramelizes, turning brown but not yet burnt.
- Add the garlic to the beans and mix.
- Add the beans into the pan and mix with the onion and oil.
- Mash the beans with a potato masher while stirring. Add the leftover water if the beans are too dry.
- Place the beans into a large mixing bowl and add 1/4 cup lime juice. Mix well.
- Set aside the beans to cool and enjoy.
